草莓燕菜月餅 Strawberry Agar-agar Moon Cake

继昨天的奇異果燕菜月餅, 今天做了三种不同的口味。三种不同的口味,我最爱的是草莓燕菜月餅,甜中带着酸味,令我非常开胃,Yummy Yummy.

蛋黄燕菜材料 Jelly egg yolk ingredients

Castor Sugar
细砂糖

Agar agar Powder
燕菜粉
1 1/4 茶匙/tsp

Instant Jelly
即溶遮哩粉
1 茶匙 /tsp

Salt
1/8 茶匙 /tsp

Pandan Leaf
班兰叶(打结)

Orange colouring
橙色素
数滴 few drops

Custard Powder
蛋黃
1/2 汤匙 /tbsp

馅料材料  Filling ingredients

燕菜月饼皮材料  Jelly moon cake skin ingredients

Water
清水
700 ml

Strawberry
草莓
180 gm

Agar agar powder
燕菜粉
4 茶匙 /tsp

Instant Jelly
即溶遮哩粉
4 茶匙 /tsp

Castor Sugar
细砂糖
180 gm

Pink Colouring
粉红色素
数滴 few drops

用具  Utensil needed
Ice-cube moulds
蛋黄
2 nos
Agar agar mould
燕菜月餅
3 nos

做法
1蛋黄 : 材料(A)放入锅里边煮边搅至滚,取出班兰叶,熄火加入(B)料,拌匀后倒入蛋黄模型,待凉后放入冰箱至凝固,取出待用。
2馅料 : 材料(C)放入果汁搅拌器,打烂后与其余材料(D)放入锅里边煮边搅至滚,离火后加入材料(E)拌匀,倒入小杯子,待稍微冷却后在中间放入蛋黄燕菜,待凝固后取出待用。
3月饼皮 : 将(F)料放入锅里边煮边搅至滚,离火后加入材料(F)拌匀. 倒少许在月饼模内,待稍冷却后轻轻放入(2),再淋至满,待冷后放入冰箱冷却,取出切块享用。

Method
1Egg Yolk : Combine (A) in a pot.  Bring to a boil.  Off the flame and remove pandan leaf.  Stir in (B).  Fill ice cube moulds with the mixture.  Leave aside to set.

2Jelly filling : Blend Cin a blender.  Transfer to a pot, add (D), cook and keep stirring until it boils.  Remove from heat and stir in Eimmediately.  Pour the mixture into a small plastic cups.  Allow to set slightly before placing in the prepared jelly egg yolk.  Leave aside to set. Remove and set aside

3Jelly mooncake skin : Combine (F) in a pot.  Bring to boil.  Pour some of the (F) into jelly mooncake mould.  Allow to set slightly before placing in the prepared jelly filling.  Fill the mooncake mould with remaining (F), leave aside to set.  Chill well before turning out to serve.
